Soy Cashew Milk

★★★★★

Milks

Ingredients

1/2 C. Raw cashew pieces

1/2 C. Organic dry soybeans

1.7 L. Water

1l L. water for soaking beans and nuts

Directions

Put nuts, soybeans, and 1 liter of water in a clean bowl overnight.

The next day rinse out the water / soybeans and nuts (I use a strainer)

Put in soy joy with 1.7 Liters of water, and the beans. Use the 'soy milk' with soaked beans cycle.

Strain through a 150 micron bag into a clean, pourable container (I use the Kuhn Rikon 4th burner put). Discard or

Save in priano jars (I like these instead of ball jars which work fine too).

Notes

Its easier if you get what are called 'superbags' from the modernist pantry. These are nylon bags which are MUCH easier to use than cheesecloth or nut bags. I also use a pair of tongs to squeeze the extra milk out of the bags. This is especially important with hot milks such as soy milk.
